This beer was brought to my attention a few weeks ago by my buddy Marty and when he told me it was a 5 day IPA I didn’t believe him. I’ve had 60 minute IPA’s, 90 minute IPA’s and even 120 minute IPA’s but FIVE DAYS!? Being an IPA lover I couldn’t imagine how dry and bitter this could possibly be. So…the other night after a 3-11 shift, Marty shows up on the Porch with a sixer of it. Nice surprise and I knew a good night was about to happen.
Unlike the “minute” IPA’s, where the brewer adds hops every minute or so for 60, 90 or 120 minutes (I’m not a brewer so forgive me for not knowing at what point in the brewing process this takes place) O’Fallon adds whole dry hops to the finishing tank and lets the beer “rest” on top of the hops for 5 whole days before bottling.
It poured a nice looking cloudy copper/orange color, with a thin white head and decent lacing. Marty said it had a floral aroma, I thought it smelled like a pine tree. After a couple of drinks, and the belches that come with them, we agreed that we were both right. I expected an extreme amount of dry hoppiness, but was pleasantly surprised that the bitterness wasn’t overbearing. It had just a little bit of malty sweetness at first but after each drink, you know you just had an IPA (or APA as we in America like to say.) Good hoppy finish, and very drinkable. A good session IPA (APA), but be careful, it comes packing a 6.1% ABV. This one has a good balance of all ingredients and leaves me wanting another. Good job O’Fallon, I will definitly be on the look out for this one again.
A good cookout beer that would go well with a variety of foods. I would recomend a grilled blackened swordfish steak or catfish with some of my brother “Fred’s” home made cajun rub. BTW, I was right about the good night about to happen. It took me three days to regroup my thoughts enough to finally write this review. Thanks again Marty for the beer and making sure my beer belly doesn’t disappear.
